Tomato Tart

Ingredients:
For the dough:
– 250g flour
– 125g cold butter, cut into small pieces
– 1/2 teaspoon salt
– 60ml cold water

For the filling:
– 4-5 ripe tomatoes, thinly sliced
​​- 200g grated cheese (cheddar, mozzarella or other melting cheese)
– 2 tablespoons Dijon mustard
– A few fresh basil leaves, chopped
– Salt and pepper to taste
– Olive oil for drizzling

Instructions:

1. Make the dough by mixing the flour and salt in a large bowl. Add the cold butter and mix with your fingertips until it resembles sand.

2. Add the cold water, a little at a time, mixing with a fork until the dough begins to come together. Gather it into a ball and wrap in plastic wrap. Refrigerate for at least 30 minutes.
